Flavoured Olive Oil

Flavoured olive oil is used worldwide and gives flavour to salads, roasted vegetables, cheese and they are the `ultimate` dip for bread and pastries. Ingredients:

  • 4 cups of extra virgin olive oil
  • 1 rosemary sprig
  • 1 tbsp of dried thyme
  • 1 tbsp of dried oregano
  • 3 leaves of fresh mint
  • 4 leaves of fresh basil
  • 1 tbsp salt


Instructions:

  • Wash the herbs and dry them using a towel.
  • Grind the herbs in a mortar or blender to release their aroma.
  • Place them in a clean, dry bottle. Pour the olive oil and add the salt. Put the cup back and store it in a cool, dry place for three weeks. During this time shake the bottle a couple of times.
  • Sieve the olive oil and place it in a clean bottle. Throw away the herbs.
