Flavoured Olive Oil
Flavoured olive oil is used worldwide and gives flavour to salads, roasted vegetables, cheese and they are the `ultimate` dip for bread and pastries. Ingredients:
- 4 cups of extra virgin olive oil
- 1 rosemary sprig
- 1 tbsp of dried thyme
- 1 tbsp of dried oregano
- 3 leaves of fresh mint
- 4 leaves of fresh basil
- 1 tbsp salt
Instructions:
- Wash the herbs and dry them using a towel.
- Grind the herbs in a mortar or blender to release their aroma.
- Place them in a clean, dry bottle. Pour the olive oil and add the salt. Put the cup back and store it in a cool, dry place for three weeks. During this time shake the bottle a couple of times.
- Sieve the olive oil and place it in a clean bottle. Throw away the herbs.
