Grilled Vegetables
Ingredients:
- 2 big or 4 small aubergines
- 3 courgettes
- 2 potatoes
- 2 peppers
- 5-6 pleurotus mushrooms
- 1 tomato
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp oregano
- some rosemary, balsamic vinegar, salt
Instructions:
Wash the vegetables and slice them. Finely slice the carrots as they need more time to cook. Put all the vegetables a tray. Add the oregano, rosemary, salt, oil, grated garlic and mix. Let them absorb the flavours of the herbs and garlic and then grill them until they soften and get a lovely golden colour. Sprinkle some vinegar over the vegetables.
